The first course starts with a meaty crab salad topped off with sustainable Kaluga Queen caviar or sustainable salmon roe topping. The next course brings diners to the Middle East with colourful Middle Eastern cuisines featuring baked saffron falafel, Impossible meat kebab, creamy baba ganoush, and freekeh tabbouleh.
Diners are transported to India next, where the third course serves up fragrant butter chicken and naan. The fourth course cleanses the palette with a hit of frozen lemon ginger with a tinge of chilli oil inspired by the Himalayas. The next trip to China will serve an oriental spread starting with sustainable Maine lobster or sustainable steamed barramundi steamed with ginseng and superior soy sauce, seafood dumpling, and abalone.
For the dessert, Le Petit Chef prepares an interesting take on caramelized saffron and cardamom rice pudding using spices from his journey.
