temper, the Ebb & Flow Group's creative new concept in Tanjong Pagar, joins Singapore's bustling dining scene. Located close to the Mondrian Singapore Duxton, this tiny venue blends wine, cocktails, food, and music to offer a multi-sensory experience for discerning guests looking for more than simply a night out. Inspired by the concept of tempering (balancing temperature, texture, and time), the venue is designed to provide layered experiences that are both refined and approachable.

temper's design spans 4,000 square feet and combines Bauhaus precision with cinematic warmth. The space is distinguished by raw textures, sculptural forms, and gloomy lighting, with a dramatic arched portal connecting the two settings: an aristocratic wine room upstairs and a lively cocktail club downstairs. Each area has its own distinct mood, but when combined, they provide a seamless experience via taste, sound, and culture.

temper's wine programme is led by Roberto Duran, a former head sommelier at the famous 67 Pall Mall. The custom-built cellar has over 1,200 labels and 2,100 bottles from more than 30 countries, 250 of which are accessible by the glass. The wine list is intended for discovery, inviting guests to explore according to mood and moment rather than formality. Whether you're a collector or just interested, Roberto's method makes each pour feel special.

The cocktail menu is curated by South Korean bartender June Baek, a Chivas Masters Global finalist and Singapore champion, alongside Head Bartender Kishan. Their creations reimagine classics and introduce playful signatures.

Highlights include the temper's Cup, a delightful blend of Hendrick's Grand Cabaret, strawberry, cucumber, kiwi, and sparkling wine; and the T.T.K. Old Fashioned, a nutty, savoury spin on the classic, combining peanut butter-washed whisky with sesame, cocoa bitters, and coconut smoke. Guests can also sample Duxton-inspired cocktails, which trace the district's history from nutmeg farms to its current artistic identity.

Music forms a key layer of the experience, curated by Joshua Pillai, co-founder of Phat Cat Collective. The cocktail lounge pulses with live jazz, vinyl sessions, acoustic performances, and DJ sets showcasing funk, soul, hip-hop, and eclectic Asian gems. From Kaye of DarkerThanWax to Dita Jacob's soulful vocals, the roster creates a soundtrack that changes with the evening, complementing each meal and drink with intensity and emotion.

The kitchen is led by Executive Chef Nicolas Tam of Michelin-starred Willow and Head Chef Ronald Sim, formerly of Burnt Ends and Candlenut. The menu focuses on refined comfort food that is flavourful and precise. Signature dishes include the Crab Roll, which is stuffed with claw meat, the Red Shrimp Carpaccio, which is drenched with shrimp emulsion, and the decadent temper Burger, which is laden with wagyu, cheddar and housemade sauce.

Seafood fans will be lured to the tower of oysters, mussels, crab, and crustaceans, while larger meals such as the 900g Turbot with pil-pil collagen sauce and the Uni Linguine offer luxury. Dessert is not an afterthought, with the warm Pastel de Nata providing a satisfying finish.

temper opens, Monday through Wednesday from 5 p.m. to 1 a.m., and Thursday through Saturday from 12 p.m. to 1 a.m. Starting in October, guests will be able to enjoy themed brunches: the Adult Brunch on the first Saturday of each month and the Family Brunch on the last Sunday, both of which take place from 12 p.m. to 4 p.m.
