French fine-dining destination Saint Pierre ushers in the festive season with specially created menus by Chef-Owner Emmanuel Stroobant.
Lavish your loved ones with an exquisite meal at the Two MICHELIN-Starred restaurant, which presents a four-course lunch and seven-course dinner for Christmas Eve, and a four-course lunch and eight-course dinner for New Year’s Eve. The Festive Takeaway menu offers a parade of treats for those who prefer to bask in the holiday spirit at home.
Diners can take in the breathtaking backdrop of the Marina Bay skyline as they indulge in a luxurious four-course lunch (S$248++ per person) and seven-course dinner (S$488++ per person). The latter features Hokkaido Sea Urchin, Hokkaido bafun uni nestled on top of ginger-infused cauliflower purée and tarragon gelée. This is followed by Gillardeau Oyster – a fresh Gillardeau oyster topped with N25 Almas caviar, alongside celeriac cream with cucumber celeriac consommé.
The highlight of the Christmas Eve dinner is Minquiers Island Blue Lobster – Minquiers Island blue lobster confit in a coconut broth scented with lemongrass, ginger and chilli. The crustacean is blanketed with alternating circles of Périgord black winter truffle and coconut.
Pyrenees Lamb Saddle comes next – roasted Pyrenees milk-fed lamb saddle, stuffed with sweetbreads, alongside parsnip-miso cream, pan-fried monkey head mushroom, parsnip tuiles, and lamb jus. Hawke’s Bay Venison, Hawke’s Bay grass-fed venison, is served with a layer of kabocha tartare, enveloped in venison mousse, all housed in a gingerbread crust.
Amane Melon is a refreshing pre-dessert composed of fragrant Amane muskmelon from Shizuoka, Sauternes gelée, fresh lemon balm, muskmelon sorbet and Toulouse violette sauce. Rounding out the meal is Korean Chestnut, where Korean chestnut purée encases Vanuatu vanilla perfumed-cream sitting in a Lifou multifleur honey tartlet.
For lunch, the four courses that will be served are Minquiers Island Blue Lobster, Pyrenees Lamb Saddle, Hawke’s Bay Venison, and Korean Chestnut.
Saint Pierre’s Christmas Eve Lunch and Dinner Menu is available on 24 December 2022 and is priced at S$248++ per person and S$488++ per person respectively. Guests can opt for a cheese supplement at S$38++, and a wine and premium wine pairing at S$248++ and S$416++ (dinner only).
Bid adieu to 2022 with a delectable four-course lunch (S$298++ per person) and eight-course dinner (S$528++ per person). Start with the ambrosial N25 Almas Caviar, a nori tartlet paired with cauliflower mousse and tarragon gelée, crowned with N25 Almas caviar. One of Chef’s signatures is Manjimup Marron. The confit Manjimup marron is showcased to perfection atop oba leaf jelly, accompanied by Jerusalem artichoke cream and wasabi-infused buttermilk sauce.
Hokuriku King Crab brings together barbecued Hokuriku king crab leg, lightly smoked maitake mushroom and lemongrass-infused butter sauce. Nagasaki Flounder consists of butter-poached Nagasaki Hirame flounder with beurre blanc made with razor clams, finished with walnut-ginger oil and smoked pike roe, adorned with roasted walnut shavings.
Another highlight is Amela Tomato – an Amela tomato is baked till semi confit and served with two condiments: white miso emulsion with garlic, galangal and ginger, and a kaffir lime leaf-perfumed consommé. Anjou Pigeon showcases roasted Anjou pigeon breast glazed with togarashi, stuffed confit celeriac, celeriac tuiles and Anjou pigeon leg shepherd’s pie.
The pre-dessert Niigata Le Lectier Pear features a Cabernet Sauvignon- and cinnamon-poached Niigata Le Lectier pear, accompanied by a pear sorbet and cinnamon-pear gelée. For dessert, Mediterranean Willowleaf Mandarin is a delightfully balanced mini St. Honoré with hōjicha cream, single estate chocolate ganache and Willowleaf mandarin compote in a choux puff.
For lunch, the four courses that will be served are Manjimup Marron, Nagasaki Flounder, Anjou Pigeon, and Mediterranean Willowleaf Mandarin.
