Mark your calendars for a memorable evening on Wednesday 25 October, 2023, if you enjoy Italian cuisine and great wines. The Cliff's Bava Piemonte Wine Dinner offers an extraordinary voyage to Northern Italy, delivered to you in conjunction with the prestigious Bava Winery from Piedmont.

The Cliff, perched atop a magnificent cliff, offers panoramic views of the South China Sea that mimic the undulating hills of Piedmont. It's the ideal setting for this culinary journey.

Chef de Cuisine Paolo Benedet

Culinary Artist Chef de Cuisine Paolo Benedet is the man behind the exceptional menu. His Northern Italian roots lend a warm, personal touch to each item on the menu. Each course has been meticulously paired with great wines from Bava Winery, resulting in a perfect balance of flavours.​​​​​​​​​​​​​​

Roberto Bava The Wine Enthusiast, a sixth-generation member of the prestigious Bava family. Will be telling you stories about the winery and vineyard's four-century history. Roberto's participation adds a historical depth to an already interesting evening.

The Bava Piemonte Wine Dinner features a delicious five-course dinner of Piedmontese food, expertly paired with five carefully selected wines from Bava Winery.

Insalata Di Granchio & Misticanza: Begin your voyage with a delectable crab salad flavoured with apple, mixed greens, and a tantalising "Bagnet" salsa. This dish goes well with the Bava Cor De Chasse Gavi D.O.C.G. Del Comune Di Gavi 2021, a medium-bodied wine with a dry and refreshing flavour.

Vitello Tonnato, paired with Bava Thou Bianc Piemonte D.O.C. Chardonnay 2022

Vitello Tonnato: Chef Paolo's childhood favourite, veal loin in traditional tuna sauce with crunchy capers, continues your gastronomic experience. When combined with the Bava Thou Bianc Piemonte D.O.C. Chardonnay 2022, a dry and savoury chardonnay with a bouquet of orange blossoms, acacia, linden, banana, and honey, the flavours of this Piedmontese cuisine come to life.​​​​​​​

Gnocchi Castelmagno & Tartufo: The third course is a wonderful gnocchi pasta dish drenched in Castemagno cheese fondue and topped with shaved truffle. Chef Paolo's pairing of it with the Bava Libera Barbera D'asti D.O.C.G. 2021 is brilliant. This ruby-red wine, made from the vineyard's Barbera grapes, has a balanced palate and wonderful red berry flavours.

Brasato al Vino Rosso: For the main course, enjoy slow-braised beef short rib with polenta, green asparagus, and a natural reduction sauce. This dish pairs well with the world-famous Bava Barolo D.O.C.G. Del Comune Di Castiglione Falletto 2017. This Barolo, known for its tannins that mellow with age, is an experience in and of itself.

Bonet: End your culinary journey with the typical chocolate semifreddo surrounded by amaretti biscuits. The excellent Bava Moscato D'asti D.O.C.G., made only from Canelli White Moscato grapes, is the final wine pairing. It has a sweet and lasting palate with a floral and fruity scent.
