Sophia, the St. Regis Singapore's elegant new dining destination, provides a sophisticated rendition of modern Italian cuisine to the city's most prestigious address. Sophia, inspired by the classic warmth of Italian hospitality and imbued with a contemporary sensibility, celebrates conviviality, craftsmanship, and culture with each dish. Chef de Cuisine Angelo Sergio, a native of Puglia, leads guests on a culinary trip through 11 different regions of Italy. Each plate features classic recipes reinterpreted with fresh, honest ingredients and served with increased flair.

The St. Regis Singapore's General Manager, Nick Heath, described Sophia as a venue aimed to provide "a curated Italian dining experience that honours authenticity with elevated execution." He went on to say that Sophia brings the charm of Italy to Singapore's dynamic heart, establishing it as a new social hub where guests can savour timeless flavours and watch engaging tabletop rituals.

An Authentic Taste of Italy

Sophia Carpaccio di Gamberi

Sophia's dining experience is intended to be shared with friends and family, in the tradition of Italian gatherings. The menu starts with a selection of handmade breads and antipasti. Guests can have freshly made focaccia topped with cherry tomatoes, exquisite beef bresaola drizzled with honey, and creamy stracciatella served with smoked red tuna.

Sophia's commitment to regional authenticity and balance is exemplified by the Polpo Grigliato, which features smoky grilled octopus served over a bed of fava beans with Tropea onions, mint, lemon zest, and semi-dried tomatoes, and the Carpaccio di Gamberi, which is made with buttery Mazara red prawns and raspberry and lemon gel.

Sophia Tagliatelle Atavi e Porcini

Sophia's handcrafted pastas celebrate Italian culinary artistry. Tagliatelle Atavi e Porcini, created with hickory-smoked Atavi pasta imported directly from Italy, is flavoured with porcini and veal jus. The Pappardelle al Ragù is equally outstanding, with hand-cut Wagyu beef slow-simmered into a creamy ragu that delicately coats each ribbon of pasta.

Main courses like the Bistecca alla Fiorentina, a one-kilogram Angus T-bone grilled to perfection and served with pepperberry sea salt, red wine jus, and rustic cannellini beans, and the Baccalà in Umido, a comforting cod stew enriched with white onion sauce, potato, and artichoke, demonstrate the kitchen's mastery of flavour and texture.

A Sweet Conclusion

Sophia's Italian journey concludes appropriately with the dolci menu. Guests can have a classic Tiramisu covered with espresso-soaked ladyfingers or the Baba Napoletano, which is steeped in limoncello syrup and topped with Chantilly cream and strawberries. Desserts like Cannoncini alla Crema and Salame di Cioccolato are cooked and presented tableside, creating a stimulating theatrical atmosphere. Sophia also offers two- and three-course set lunch menus, priced at $42++ and $58++, respectively, Monday through Saturday.

Sunday Brunch with Italian Flair

Every Sunday, Sophia changes into a dynamic social place for its signature brunch, where guests are greeted with Mimosas and Aperol Spritzes while listening to uplifting sounds from a live band. The brunch menu has a mozzarella bar, made-to-order spaghetti, gourmet cheeses and a wandering gelato cart serving freshly churned Italian gelato. Sophia's famous tiramisu is served throughout the dining room, adding to the sense of indulgence. For $198++, guests can upgrade their brunch experience with free-flowing R de Ruinart Champagne and house wines, making it one of Singapore's most sophisticated Sunday occasions.

Celebrating Italian Wines and Cocktails

Sophia's beverage program pays tribute to Italian workmanship. Signature cocktails like the Amalfi Breeze, Bella Rossa, and Negroni Bianco use Malfy Gin brewed with botanicals from the Amalfi Coast, reflecting the zesty spirit of the Mediterranean. Along with these innovative innovations, timeless classics such as the Negroni and Aperol Spritz retain their deserved position on the menu.

The restaurant's wine selection includes 70 artisanal labels from Italy's most recognised wine regions, including Lombardy's Franciacorta, Tuscany's Brunello, and Sicily's Etna. Each bottle has been carefully selected to reflect the diversity and depth of Italian viticulture, with nine organic wines highlighting sustainable practices. Traditional digestifs such as Grappa, Limoncello, and Sambuca round off the dining experience, offering a perfect conclusion to an authentic Italian meal.

Sophia is open for lunch from 12:00 PM to 2:30 PM (Monday through Saturday), dinner from 6:30 PM to 10:30 PM daily, and brunch from 12:30 PM to 3:00 PM on Sunday. Reservations can be booked via www.sophia.com.sg

Expat Choice attended the unveiling of Sophia @ St. Regis, as it opened its doors to the newly renovated modern Italian dining concept. A stark difference from the many times I frequented this serene, more formal space.

For starters, Sophia sets a casual tone, encouraging patrons to sit back and relax without the formalities that come with five-star dining. And so we did, with Chef de Cuisine, Angelo Sergio, on hand to spoil us with exquisite fare from 11 different Regions in Italy.

Floor to ceiling glass windows looking out to lush greenery set the pace for a relaxing afternoon especially with seventy artisanal wines, cocktails and mocktails available on the menu.

This afternoon so resembled the essence of Italy, a land of plenty where people grace occasions with style in fashion, food and lifestyle. Sharing platters helped us taste the variety ahead.

A favourite antipasti – Carpaccio di Gamberi where slivers of Mazara (the prawn island of Italy) red prawn were accompanied by delicious raspberry and lemon gel, lifting flavours with plankton oil and sea salt. Light to the palette, a perfect starter!

Porcini mushroom, black truffle and parmigiano pizza was made doubly exciting with a chewy dough. I enjoyed it so much, I ran the risk of filling up too fast before the numerous other dishes that were to hit our table.

Smoked tagliatelle pasta, a first for me and apparently only to be found at Sophia, we loved this porcini mushroom and veal jus combo. Ravioli from the Puglia Region made with a tomato sauce recipe from Grandma.

It was evident that this extremely fine fare was curated well by the empty plates on every table. So many firsts for me, another being crispy capers that accompanied seared yellow fin tuna with fennel & orange salad.

The second main, chicken breast alla diavola was probably my pick for the afternoon. Surprised at myself (usually preferring other more flavoursome meats) that this juicy chicken was so well paired with amazing diavola sauce. Never had anything like it before, I had seconds.

Grilled striploin ended our feast only to make way for desserts. We were entertained to a live station with the Cannoncini alla Crema trolley appearing for a cream filling pastry horns experience. The best in town which brought back memories of school days when these were a treat for a job well done. Dipped in ground pistachio, I loved every bite, tempted to have more.

A unique chocolate salami with blood orange pate and biscotti, made this feel like a Kit Kat. Funny I know but true!  Sipping a must-have home-made limoncello, I felt it was the most appropriate way to end a beautiful Italian lunch.

If Sunday brunch at Sophia would be more up your alley, complement it with  bottomless pours of R de Ruinart Champagne for $198++ (includes house wines).
