On 24 March 2022, Zafferano showcases dazzling wines from Domaine de la Charbonnière accompanied with five courses of contemporary Italian fare. Domaine de la Charbonnière has been run by the Maret family since 1912. Today, the 4th generation produces wonderfully well-balanced wines that combine the intensity and depth of fruit with finesse and elegance.
The evening commences on a refreshing note with a selection of canapés, paired with a bright and crisp 2019 Châteauneuf du Pape Blanc. It follows with a delightful smoked Yamanashi egg yolk topped with cauliflower, lardo di colonnata, and truffle. Savour the appetiser with a rich ruby coloured 2019 Châteauneuf-du-Pape Cuvée Domaine, brimming with flavours of smoked black fruits and roasted garrigue.
Next on the menu is a deep 2015 Châteauneuf-du-Pape Cuvée Mourre des Perdrix with beautiful hints of dark berry fruits that coat the palate, and it pairs perfectly with a flavoursome Castelmagno ravioli with venison and Comice pear. The main course of the evening, prepared by Zafferano’s Head Chef Andrea De Paola, is a succulent and tender charcoal-baked pigeon with chard, white polenta, and Balinese pepper. It is partnered with a gorgeous 2015 Châteauneuf-du-Pape Cuvée Les Hautes Brusquieres, made with a 60/40 blend of Grenache and Syrah grapes. The intense aroma of blood plum and dark cherry fruits shines through most brightly here, leaving a pleasant and long finish on the palate.
Savour lovely chocolate variations with espresso, caramel and bay leaves. The dessert is harmoniously matched with the 2015 Châteauneuf-du-Pape Cuvée Vieilles Vignes that delivers fine raspberry, apricot-scented fruit, and chocolate notes.
The Domaine de la Charbonnière Wine Dinner is available at Zafferano on Thursday, 24 March 2022. Reception begins at 7:00pm and dinner commences at 7:30pm. Priced at $198++ per person, and at an early bird price of $158++ per person.
