Alain Devahive, a multiple-award-winning chef, is in charge of the kitchen at Noa. Chef Alain's expertise was perfected over the course of a spectacular 10-year career that included stints at several Michelin-starred restaurants in Spain, including the el Bulli. Chef Alain has been inspired by his family's history and his travels throughout the Mediterranean to create a menu that would display his and his team's dedication and talent.
While developing Noa, the creative team at The Barmuteary Group set out on a spectacular gastronomic adventure to learn about the regional culinary traditions of the Mediterranean. They explored the many culinary traditions to learn about the distinctive tastes and cooking methods and to find commonalities among them.
As a result of their travels, The Barmuteary Group has been able to distil the best aspects of several cuisines into a single dish, resulting in a gastronomic masterpiece that is uniquely Noa. "It's our modest ode to the Mediterranean way of life," explains Head Chef Alain Devahive.
Chef Alain is backed by an army of dedicated cooks, including Noa's head chef Victor Sia, Group Chef Wang Leung, and Food Director Celina Franco. The two of them are dedicated to infusing each dish with the bright and welcoming essence of the Mediterranean. Restaurant Manager Catalin Firanescu, who has worked in the hospitality industry for over a decade, oversees the efforts of the Noa service staff. Each drink at Noa is expertly crafted by Mixologist MichaelJ, who has extensive understanding of spirits, wines, and cocktails.
The cuisine served at Noa Lounge is infused with the complex flavours of the Eastern Mediterranean, Southern Europe, and North Africa, and the restaurant's atmosphere is inspired by these regions. In order to present guests with an experience that is really fascinating, the staff at Noa takes great satisfaction in expertly building a welcome ambience, providing superb service, and adding smart design. They highlight the one-of-a-kind cultural fusion that has developed in the Mediterranean region throughout the centuries as a result of migration and trade throughout the area.
