A new cocktail menu at MO BAR transforms Singapore’s creative landscape into a sensory journey of flavour and artistry. Through collaborations with artists and makers, each drink captures a moment in the city’s cultural rhythm.

Singapore has long been celebrated for its culinary imagination, but increasingly the city’s cultural life is being explored through a different medium. At MO BAR in Singapore, cocktails become a language of storytelling, revealing the city through flavour, craft, and collaboration. The newly unveiled Vol. 7 Modern Localism menu, titled The City of Art, invites guests to wander through Singapore much like a curious traveller might, discovering the rhythm of the city from morning rituals to late-night gatherings.

Rather than presenting drinks as isolated creations, the menu unfolds like a day spent exploring Singapore’s creative neighbourhoods. It reflects the small moments that shape a city experience. The scent of perfume before stepping out. The quiet contemplation inside a gallery. The pause for coffee between studios. Each cocktail captures one of these moments, distilled into flavour and atmosphere.

The journey begins with the soft rituals of morning. Sifr Fizz opens the day with aromatic elegance, drawing inspiration from heritage perfumery. Infused with essential oil hydrosol and lifted by elderflower and saffron, the drink evokes the act of scenting the skin before stepping into the day. Nearby in spirit is Forest Fire, a darker and more contemplative creation inspired by a painting displayed at the National Gallery Singapore. With whisky, mezcal and spiced amaro built on nutmeg and clove, it reflects the smoky intensity of artistic expression.

A quieter mood emerges in Velour Kiss, a cocktail created alongside Singapore’s homegrown skincare specialists at La Dermalogique. Chamomile, bee pollen and extra virgin olive oil soften the gin base, suggesting the comfort of daily self-care. The Artis offers another interpretation of modern living, developed with design studio Hans Tan. Built from fermented banana tibicos, pandan and coconut salt, the drink is served alcohol-free, with the option to add vodka, acknowledging the designer’s personal choice to abstain.

As the afternoon unfolds, the city’s café culture and creative studios take centre stage. Bukit Kemas reflects the glamour of jewellery craftsmanship through a refined mix of Ryukyu Baijiu, Lillet Blanc and roasted corn, served with a personalised garnish. Nearby in tone is Kopi Pumptini, a spirited homage to Singapore’s coffee culture created with Bettr Barista. The drink reimagines the espresso martini through Kopi O, roasted barley bourbon and a subtle note of pumpkin, offering warmth and familiarity with a contemporary twist.

Dessert-like indulgence closes the afternoon. B.T.B, created with Lemuel Chocolate, blends bourbon with cacao nib kombucha in a bright, earthy pour that can also be enjoyed without alcohol. Meanwhile, Dopa? Dopa! channels the playful creativity of the local creamery that inspired it. Salted caramel V.S.O.P., black tea and pistachio kunafa form a rich and layered composition beneath a creamy crown.

Evening shifts the mood toward conviviality. Reclaimed Sling 3.0 revisits the classic Singapore Sling through a cleaner, sharper profile built on No. 3 Gin, honouring a cocktail synonymous with the city. Jo-hwa introduces a subtle East Asian dimension, blending matsutake mushroom-infused gin with fino sherry, verjuice and pear to create a balanced interplay of fruit and umami. When live music begins, Jukuleles brings a lighter spirit to the room with mezcal, yuzu marmalade, tulsi and bitters shaped into a relaxed tropical highball.

The night concludes with Pine-Dustry, a playful tribute to Singapore’s bartending community. Tequila, coconut and a white wine reduction arrive alongside a pineapple tart garnish, offering a final moment of hospitality before the city slips into its late-night rhythm.

Throughout the experience, established signatures anchor the menu with a sense of continuity. The Mandarin Martini, crisp and savoury with mandarin bitters and caper berry, sits beside the M.O. Whiskey Sour, which blends Angel’s Envy Bourbon with the hotel’s signature tea and a delicate meringue foam. Oriental Heritage offers a deeper, spirit-forward close with Macallan Double Cask 12 and Hennessy XO layered with osmanthus and warming spice.

Taken together, the menu feels less like a list of drinks and more like a notebook of impressions gathered across Singapore. Each cocktail reflects an encounter with an artist, designer, artisan or musician, turning everyday creativity into something that can be tasted. In a city known for reinvention, the result is a portrait of Singapore told not through landmarks, but through the people and passions that shape its cultural pulse.
