This November, Man Fu Yuan at InterContinental Singapore will introduce one of China's most cherished and ornate dining traditions to Singapore with the exclusive Manchu-Han Banquet "Auspicious Clouds" Edition. The Manchu-Han Imperial Feast, which originated in the Qing Dynasty, is regarded as the pinnacle of Chinese gastronomy, consisting of hundreds of dishes cooked over several days and reserved only for emperors and state ceremonies.

On November 8 and 9, 2025, Singapore will authentically achieve this culinary legacy for the first time. Executive Chinese Chef Aaron Tan, Singapore's first fully trained chef in this sophisticated culinary discipline, will work alongside his tutor, Master Chef Qi Jinzhu, to serve more than 20 exquisite dishes that embody the essence of both Manchu and Han traditions.

Master Chef Qi is a direct culinary descendant of the Qing court, having received training from Tang Keming, the dynasty's final royal chef. With over five decades of experience conserving imperial recipes, his participation assures that this event remains faithful to its history.

Chef Aaron, who went through a rigorous screening procedure to become his disciple, is one of just a handful people in the world to have received this accolade. Together, the duo will create an unforgettable dining experience that combines traditional dishes with sophisticated modern execution.

The banquet will begin with a Cantonese tea ceremony and progress through expertly prepared dishes, including cold appetisers and stir-fries, breads, soups, and a closing tea. Among the highlights is the Auspicious Cold Platter, which includes delicacies like Braised Duck Gizzard, Beef Shank, and Wasabi Pork Tripe.

Diners will also enjoy intricate creations like The Phoenix Returns to the Nest, a double-boiled bird's nest coupled with chicken mousse and quality Jinhua ham, and Kun Lun Abalone, which braises Xu Rong abalone with dried grouper skin for layers of texture and flavour.

In a nod to imperial grandeur, the evening's main course will be a Roasted Whole Lamb marinated in Mongolian spices and perilla leaf before being slow-roasted to delicate perfection. The banquet closes with the exquisite Pearl White Jade Soup, which features baby spinach, tofu, and rice for a refined finish. To create the ambiance of an imperial court, guests will be immersed in live symphonic performances, traditional dancing, and superb calligraphy, upgrading the evening from a meal to a cultural experience.

The entire cuisine has been meticulously reimagined for Singapore, paying homage to classic imperial techniques and including premium condiments from Lee Kum Kee, such as its famed Premium Brand Oyster Sauce and Chu Hou Paste. This guarantees that each dish strikes a balance between tradition and flavour while also adding a modern twist.
