Expat Choice Asia was invited to Town Restaurant at The Fullerton Hotel Singapore to experience Our Home, Truly: A Singaporean Feast with Li Nan Xing, a National Day dinner buffet running from 1 July to 9 August 2026.
Created in collaboration with veteran actor and passionate home cook Mr Li Nan Xing, this buffet celebrates Singapore food through family recipes, local favourites, and a dining spread that works well for families, friends, visitors, and anyone who enjoys a good buffet.
Town Restaurant is already familiar to many diners. Located inside The Fullerton Hotel Singapore, it offers a wide buffet selection that includes chilled seafood, Japanese dishes, local Chinese favourites, Indian selections, salads, charcuterie, cheese, bread, and desserts. For this National Day season, the main draw is Li Nan Xing’s Signatures.
The live station serves Peppery Bak Kut Teh with Black Garlic and Crispy Seafood Cake. The bak kut teh comes with pork ribs cooked until tender, with black garlic adding depth to the broth. It still feels familiar, but with a slightly different edge. The Seafood Cake is based on the local prawn fritter, served with Mr Li’s dipping sauce. It is easy to enjoy and even easier to return for another piece.
The Peranakan-style dishes sit at the heart of this feature. Aromatic Nyonya Beef Rendang brings braised beef in coconut gravy, lifted with kaffir lime and lemongrass. Kampung Curry Chicken is the kind of dish I recognise from home meals. Signature Assam Pedas brings fresh fish in tamarind gravy with eggplant, lady’s fingers, chilli, herbs, and spices. Homestyle Nyonya Chap Chye brings together snow peas, bean curd, black fungus, napa cabbage, carrot, and tang hoon.
These are familiar local dishes with familiar tastes. They are not trying to be clever or reinvented. They taste like food made with memory, care, and respect for the original recipes.
While the Li Nan Xing dishes were the reason for the visit, Town Restaurant’s regular buffet favourites are also available. The chilled seafood selection includes slipper lobster, snow crab leg, sea prawn, half-shell scallop, hard-shell clam, green-lipped mussel, and Babylon snail. The Japanese counter offers sashimi, sushi, tempura prawn, takoyaki, cured tuna, smoked salmon, and salmon gravlax.
I also enjoyed the Roti John, served with spiced ground beef on egg-crusted bread. The Spicy Kueh Pie Tee comes filled with braised turnip, prawn, century egg, and house-made chilli sauce. At the carving station, the Meltique Beef Striploin adds a local twist with kaffir lime and lemongrass. The Malay-Style Grilled Sea Bass is served in banana leaf with cayenne sambal and lime.
There are also local favourites such as Blue Pea Flower Nasi Lemak, Laksa, and Fishball Noodles. Make sure you try the Hainanese Chicken Rice. The steamed chicken is tender, gelatinous, and full of flavour.
Leave room for dessert. In fact, leave more room than you think you need. The dessert selection is enormous.
Served warm, there is Kueh Lapis Pudding with Chocolate Sauce and Pulut Hitam with Coconut Milk. Whole cakes include Ondeh-Ondeh Cake, Lychee, Raspberry & Bandung Cake, Mango, Coconut, Passion Fruit & Chocolate Cake, Hazelnut Praline Crunch Cake, Earl Grey & Raspberry Cake, and Strawberry Shortcake.
There are also mini cakes such as Morello Cherry & Chocolate, Lavender, Blueberry & Green Tea, Apple, Yuzu & Matcha, and Mango & Pineapple Panna Cotta. Local favourites include Durian Pengat and Assorted Nyonya Kueh, while the confectionery counter offers pralines, macarons, cocoa dragees, and cookies.
You will also find ice cream and sorbet in strawberry, chocolate, vanilla, and raspberry, plus a chocolate fountain with cookies, marshmallows, choux puffs, brownies, and waffle biscuits.
And then there is the one item you absolutely must try: chilli crab ice cream. Yes, that is right. Chilli crab ice cream. It is different, and that is the point. You get the creaminess first, followed by a hint of chilli at the end. It will get people talking at the table, and that is half the fun of a buffet like this.
Town Restaurant has put together a National Day buffet that feels right for the season. It gives Singaporeans familiar flavours, gives visitors a way to taste several parts of local food culture in one sitting, and gives families a reason to gather at a hotel buffet without feeling the meal is too formal.
Mr Li Nan Xing will also be present from 7 to 9 August to serve his signature creations, which gives diners another reason to book during the National Day weekend.
Dinner is available Tuesday to Saturday, 6.30 p.m. to 10.00 p.m., from 1 July to 9 August 2026, priced at S$98++ per adult and S$49++ per child aged six to 11. Menu items are subject to change, so go with an appetite and a little curiosity.
