Inspired by the vibrant pizzas at the heart of every Italian town, Dopo Teatro, signifying “After Theatre” in Italian, is where a slice of traditional Italian cuisine meets modern interpretation.

Here you will find a beautiful ensemble of old and new, from Italian Antipasti, Salads, Handmade Pastas and Hand-stretched pizzas, made with premium Japanese ingredients. Located along the waterfront at Esplanade Mall, it is also complemented with a breezy alfresco dining area where you can soak in the picturesque city night views.

A spellbinding gourmet session awaits you at Dopo Teatro. To start, you cannot go wrong with the Japan Sakoshi Bay Oysters (S$34 half dozen, $60 dozen). Plump and silky, each oysters are topped with yuzu and cucumber granita, seaweed caviar and cured lardo that will effectively kickstart your palate engines. The Sake Flambé Mussels (S$20), a hearty bowl filled with locally-farmed green lipped mussels in savoury sake broth.

The broth has been cooked with shio kombu, which brings a flavour and aroma that is sweet with a hint of the ocean. The crescendo of flavours builds with the restaurant’s pizza, pastas and secondi. The signature pizzas at Dopo Teatro feature a dough that has been fermented for at least 36 hours which gives the dough a delightful tang and then baked to a light and airy crisp.

Dopo Teatro’s array of mains will satisfy all your hankerings. Starring locally farmed fish seared to golden-brown perfection, the Barramundi Ballotine Arrosto pictured above (S$32) comes with charred broccolini, preserved lemons, leek marmalade, pesto arrabbiata and roasted rosemary crushed potatoes. Another showstopping dish is the Maiale Alla Pastria (S$29): the Kurobuta pork chop (pictured above) is grilled and charred over high heat and bathed in masala jus. Sautéed mushroom medley and garlic mash potatoes serve as mouth-watering accompaniments.

Dopo Teatro also offers a variety of pasta options. Beautifully plated, the Seafood Paccheri (S$25) showcases Japanese octopus ragu ragu and Japanese baby crabs atop a bed of Italian paccheri pasta. The dish is served with ice plants and finally topped with uni foam and drizzles of shiso oil, lending the dish a nice kick. Its fragrance wafting through the air, the vegetarian friendly Shiso Pesto Orecchiette (S$16) is a marriage of the ear-shaped pastas, shiso pesto, burrata, olive oil and sundried tomatoes.
