Ginger.Lily, the botanical-inspired lobby bar and lounge of Hilton Singapore Orchard, introduces Bloom by Ginger.Lily, its newest cocktail menu that expresses the rich plantation history of Orchard Road through mixology and craft.

Conceptualised by Head Mixologist Michael Mendoza, the menu highlights native fruits, herbs and ingredients in a creative range of 17 spirit-forward tipples, including low- to-no alcohol by volume (ABV) concoctions, and visually stunning libations, brought to life by multisensorial elements.

The line-up of craft cocktails combines unique concoctions and reimaginations of classics, rooted in botanicals and their natural features and enhanced by sensorial elements that enliven the drinking experience.

The menu is presented in three sections – Perennial, a selection of signature cocktails for all guests, like flowers that bloom all year round; Changing of the Seasons, drinks for every occasion, just as nature governs the seasons of efflorescence; and Evergreen, tipples created for enjoyment by anyone at any time, including a range of non-alcoholic mixes.

Bloom by Ginger.Lily -In Full Bloom

In Full Bloom ($22++), one of the perennial favourites, is Mendoza’s take on a gin and tonic (G&T) without the gin. The cocktail features an eye-catching colourful mix of citruses, berries and other fresh herbs like rosemary, steeped in Rinquinquin (a white wine-based peach aperitif) and served in a Porthole infuser. Akin to walking through a garden with a kaleidoscope of botanicals to admire and taste, the drink is a refreshing start to the evening that slowly intensifies as the night goes.

Another perennial highlight is the Kokum Spice ($24++), a sultry and mysterious spice-forward martini that is 100% vegan. Combining kokum, a spice often used in traditional Ayurvedic healing, with honey, the cocktail also incorporates Ceylon Arrack and aquafaba made from chickpea foam.

For the G&T lovers, Mendoza’s take on the cocktail is presented in Seashell ($24++), a drink inspired by Singapore’s history as a fishing port that delivers refreshing notes of lime, lemongrass, and breezy umami that reminds one of the sea. Hendrick’s Gin is combined with an amalgamation of elderflower tonic, freshly pressed cucumber and lychee lemongrass.

Blossom - Birds & The Bees

Changing of the Seasons comprises the bulk of the new cocktails to look forward to at Ginger.Lily. Inspired by the vibrant bloom of the ginger lily, the gorgeous Blossom ($22++) is a botanical spectacle not to be missed. Concocted with St. Germain elderflower liqueur, Brass Lion butterfly pea gin, honey, and lemongrass, every component of the cocktail is derived from florals, including a garnish of edible flowers which brings a refreshing pop of colour to the table.

Birds & The Bees ($30++) delivers a medley of tropical sweetness from pineapple, jackfruit and passionfruit that have been macerated for eight days, topped with Aberfeldy Whisky and a dash of ginger ale for a pop of fizz, and served with a side of honeycomb. Forager ($22++) takes guests on a tropical adventure through the Orchard Trail with Tanduay Double Rum 16 Years, and refreshing burst of flavours from pineapple, beetroot and freshly squeezed calamansi with a hint of turmeric to tie it all together.

A house favourite, the Mellow Fellow ($28++) is Mendoza’s rendition of a negroni with a mellow blend of their best spirits – Rinomato Aperitivo, Rinquinquin, Mancino Rosso, and Cainama Gin aged in a custom-made bamboo barrel that confers a subtle, herbaceous aroma to the drink.

Bloom by Ginger.Lily - Sugarcane

Casual or non-drinkers can also partake in the efflorescent celebration. The first of the Evergreen range of non-alcoholic mixes is the Lemonade Lustre ($14++), a fruity spin on lavender lemonade designed to liven up one’s spirits. Prepared with Lyre’s White Cane spirit, lacto-fermented blueberries and topped with mint sprig.

For something reminiscent of a classic ginger ale, try the American Beauty ($14++), with mellow notes of bourbon from Lyre’s American Malt, alongside equal parts maple kombucha syrup. Fresh Botany ($14++) presents a medley of fruity notes with Seedlip spice, apple kombucha, lychee and lemongrass.

Ginger.Lily Bar & Lounge ​​​​​​​

The botanical trail begins from the moment guests step into Ginger.Lily. Like its namesake, the lobby lounge located in the heart of the hotel subtly, but stylishly, draws inspiration from the ginger lily plant for its design. Large, cathedral-inspired glass panel doors lead to an airy lounge area where guests can bask throughout the day while enjoying Ginger.Lily’s signature afternoon tea experience, or an all-day selection of nutrition-packed wellness fare and artisanal pastries.

After sundown, guests may choose to unwind in the inner and cosier sections of the lounge or sit by the bar for an evening of conviviality, where they can get up close and personal with Mendoza as he works his magic around the island bar counter.

While imbibing on Ginger.Lily’s new cocktails, guests can also enjoy a piquant selection of bar snacks like Iberico Ham ($29++) with tomato basil and sourdough bread, Sakura Chicken Skewers ($24++) with percik sauce, Kurobuta Pork Tacos ($24++) with tomato, coriander and chili mole, or decadent highlights such as Rock Lobster Risotto ($52++), Premium New Zealand Maimoa Lamb Rack ($78++) and Wagyu Beef Sando ($39++).
