FBG, the community steakhouse focusing on difficult-to-access, lesser-known cuts of beef and other meats in the Bukit Timah area, launches a brand-new daytime menu, along with two new menus for the festive season.
Formerly known as Fat Belly, FBG welcomes guests to celebrate the last months of the year in its laid back, cosy space at Serene Centre with a menu of glorious charcoal-grilled meat, moreish sides designed for sharing and classic desserts with a twist.
From 3 November 2022, FBG is taking over the space of its sister concept Elixir Boutique Roasters, to offer a refreshed daytime dining menu with options for lunch on weekdays and brunch on weekends, along with their classic a la carte steakhouse menu.
From 11am to 4pm on weekdays, savour classics for lunch like the Bangers & Mash ($22), where juicy garlic snail sausage is paired with pomme puree and caramelised onion jus. Or the Steakfrites ($28) — 200g of tender grain-fed Angus Flatiron with a side of tangy salsa verde and fries.
For something heartier, go for the Beef Ragu Pasta ($20), where bronze-pressed spaghetti is tossed in a house-made sauce and topped with Grana Padano cheese and fresh basil.
There are also the crowd favourite FBG Rice Bowls ($22 - $30), a variation of the ones previously from Elixir’s menu: pilaf butter rice topped with deep-fried brussel sprouts coated with garum caramel, house-made savoury granola and a choice of Grain-fed Angus Flatiron, Wagyu MS-9+Tri-tip Steak, or Seared Scandinavian Salmon Fillet.
The brunch menu is no less indulgent, perfect for leisurely weekends spent with loved ones. Big eaters can go for the Fat Belly Brunch Plate ($30), a generous brunch platter with snail sausage, a thick slab of griddled bacon, scrambled eggs drizzled with truffle oil and oven-roasted mushrooms, paired with toasted sourdough and fresh salad. Or have the Steak & Eggs ($30), where a side of fried egg and roasted tomatoes make the grain-fed Angus Flatiron a delightfully brunchy dish.
Those with a sweet tooth will favour Elixir's Bruleed French Toast ($12), where an entire slice of brioche is coated in creme brulee before being caramelised and made into French toast, served alongside Madagascar vanilla-infused cream. Top up for a side of chicken katsu and maple syrup ($8) for that delightful balance of sweet and savoury, or a fresh selection of seasonal fruit and berries ($6). Or go simple, but no less delicious, and have it with a scoop of vanilla ice cream ($3).
The festive season is a time for comfort food and community, and this year, FBG has launched two menus. From 17 Nov - 25 Dec 2022, FBG is offering a Thanksgiving-exclusive Buttermilk Fried Turkey Sandwich ($25++): think, crispy strips of turkey meat paired with a punchy sauce gribiche — a cold egg sauce made with egg yolks, capers, olive oil and vinegar, sandwiched between pillowy-soft brioche buns.
Come together for yuletide with loved ones and feast on FBG’s Christmas Set Menu ($98++ per person, minimum 2 persons), available from 23 - 25 December 2022.
Start off with the Duck Rillette — wrapped in feuille de brick and deep-fried, served with fresh figs, cassis gel, nasturtium leaf and a side of sourdough. There is also the refreshing Barramundi Ceviche, made with a citrusy yet tropical pineapple leche de tigre marinade, topped with tapioca crisps.
For the third course, the Savel French Yellow Poulet Breast offers up the corn-fed fowl grilled to tender perfection along with black truffle tater tots, Japanese sweet potato puree, drizzled over with Nikkei sauce made with soy, orange juice, peppers & tomato.
FBG signatures are not amiss for the main course, with your pick of the 2GR Full Blood Tri Tip MS 6/7 Steak, served with a side of rich, mace-spiced celeriac mousseline and winter slaw made with kohlrabi & watermelon radish. Or go for the Primrose Farm Canadian Pork Ribeye Cap, served with pineapple chutney, spiced corn, broccolini and a richly savoury dark onion jus.
Dessert is a luscious Valrhona Chocolate & Chestnut Tart, topped with house-made Baileys Irish Cream ice-cream and spiced speculaas crumbs.
