Hidden in plain sight in the heart of Tanjong Pagar is Levant, a brand new rooftop bar with a panoramic 360-degree view offering a different perspective of the Singapore city skyline.

The cocktail menu is a contemporary interpretation of the region’s most representative taste profiles, celebrating national spirits and drinking cultures. Head to the sun-bleached shores of Greece with Greek Forest ($18), a spirit-forward blend of honeycomb-infused tsipouro, mountain pine liqueur and maglini lemon, or the refreshing, floral-imbued Apricot Clouds ($22) that layers metaxa with candied apricot and anise.

The cocktail odyssey continues in Italy with a Negroni-inspired Amber Constellation ($22), a concoction of gin and vermouth with Gran Classico bitters, bergamot and star anise that heralds the familiar bitter and spiced notes beloved by the region. Athena’s Olive Branch ($24) then transports one to Spain, with its delicious mix of Gin Mare, Madeira and olive air accented by the unforgettable aroma of floregano. A well-curated list of wines, spirits and beers sourced from around the world round out the bar program. Levant offers daily happy hour on select spirits, wines and beers from 5 pm to 8 pm, with prices starting from $12

Accompanying the tipples are moreish grub that combines European and Middle Eastern influences. The mezze-style food menu is a collection of modern dishes inspired by the region’s shared culinary customs, with highlights such as Kale Borek, Spiced Honey and Sesame ($16), addictive crispy Whitebait Fish Fries, Sumac and Harissa Yogurt ($18) and heartily robust Beef Kofta Sliders, Eggplant Fritter and Green Chilli Shatta ($18).

Illuminated by futuristic floating lights, Levant is a sleek and minimalist-designed 60-seater, tucked above a conserved shophouse with a uniquely Singaporean backdrop of skyscrapers and heritage buildings. At the heart of its open, free-flowing space is a large bar island that is the centre of the action. Levant is the latest concept from the ilLido Group by Restaurateur-Chef Beppe De Vito.

The hospitality group is also behind some of Singapore’s top F&B concepts: Art, Amò, Braci, CARNE Singapore, GEMMA Steakhouse and Southbridge. Levant officially opens this month, operating daily from 4 pm to 10:30 pm.

We had a great evening at Levant last night. Managed to sample about 8 cocktails between the two of us and saw some great bar bites coming out of the Kitchen. We indulged in the stuffed olives, perfectly fried calamari and a chicken dish which was ample food for both of us as the portions are on the Larger side, and after all it was just to have a light snack with our drinks. I want to thank the staff and the management. The barman was super, and the manager was expressive and explanatory with the mission behind the bar. I love this location in Tras Street - I just know this new additional to the bar scene in Singapore will be around for many years to come.

We felt the cocktails needed a little refining – which will come in due course over the weeks as the menu settles, after all they have only been open a short while. The craftsmanship, preparation and presentation of the cocktails are top notch. The entire creation process was quite theatrical adding an element of entertainment to the experience. The flavour combinations of the cocktail are rather unique and some extraordinary infusions going on, although quite complex in nature, the result tends to be on the sweet side – but that is just my taste. I’m more the sour guy. I think I had a bit of a sugar hit by the end of the night. I needed a chardonnay to level things out.

Overall, our visit to Levant was an entertaining and enjoyable experience. I am so pleased a bar like Levant has come into the market. Levant is relaxed, chilled, social, has a light air about the atmosphere, airy with plenty of fans, no pretentious, with a neighbourhood vibe, and what stood out is that the bar staff and the punters enjoying a drink are an extremely friendly demographic. It is the type of bar where you will most probably bump into people you know. We did! Great mix of expats and global locals. Bravo, give this one a go and plan to return. Prices are not high at all and they do have deals for bottles of wine and gin and the like - as well. Worthy of a reservation.
