White Shades, Singapore's lively four-story cocktail and dining venue on Boon Tat Street, has expanded its offerings with a new drink menu, COLOURS, as well as unique food and desserts that reflect the venue's artistic and futuristic aesthetic. The COLOURS cocktail menu is inspired by the range of hues indicated in White hues' moniker, with beverages divided into four separate themes: Clear, Mark, Mood, and Flavours. Each of the 22 cocktails has been thoughtfully developed by entrepreneur Jiawei Bai and his team to represent a distinct colour, providing an immersive drinking experience that is both inventive and visually attractive. Clarified cocktails in the Clear area, such as the Clear Yellow, which is made with Maker's Mark bourbon and milk-washed mango corn leather, offer a new twist on traditional flavours inspired by Singaporean delicacies.
The Mark portion highlights the colours of the ingredients, experimenting with depth and intensity. The Black IIII, a creative take on the classic Espresso Martini, features four black ingredients: Guinness reduction, espresso, Mr. Black Coffee Liqueur, and burnt coconut oat foam, resulting in a rich and strong drink. Meanwhile, the White III, made with vodka, Chardonnay, and plum umeshu, has a lighter, fruitier profile and is topped off with a crispy milk skin shard.
The Mood category includes whimsical drinks such as the Fresh Pink (pictured above), which is a tequila-based drink with rhubarb and sparkling pink coconut water, topped with a crisp rhubarb garnish that changes the flavour with each bite. The Flavours portion delves into how colour influences taste, with options such as the Sparkling Pearl, a champagne-based cocktail with pickled onions and herbs that creates a saline, marine character, and the earthy Woody Cedar, a whisky-forward drink with green vetiver and Hinoki wood.
In addition to its exceptional cocktails, White Shades has increased its food menu to complement its vivid beverages. Guests may now enjoy a carefully crafted wine list, which includes a crisp Prosecco rosé and a full-bodied Pinot Noir from New Zealand's Central Otago. The new dishes feature a variety of flavours, including the Pitan, a fun appetiser made with silky century egg tofu wrapped in flaky puff pastry and topped with a savoury shoyu sauce.
Seafood enthusiasts will enjoy the Pesmol, a modern take on Sundanese cuisine with barramundi fish, roasted cherry tomatoes and broccolini, while vegetarians will have the flavourful Grilled Eggplant with crispy cauliflower fried 'rice' and salsa verde.
White Shades has also developed a weekday lunch menu on Level 1, which is excellent for people looking for a tasty, quick meal throughout the workplace. Highlights include the filling Dbl Cheese Burger (pictured above) with jalapeño mayo and caramelised onions, as well as the savoury Tagliatelle with Chinese-style sausage, baby spinach and shiitake mushrooms. The menu, which has been meticulously created for both taste and convenience, ensures that lunchtime customers can have a high-quality meal without sacrificing flavour.
Pastry chef Farah has also updated the dessert menu, bringing a creative twist to served treats like the Yoghurt Strawmato, which includes a tomato tuile, white chocolate yoghurt mousse, and a bright tomato sponge. For a unique and distinctive flavour experience, adventurous guests can try the Green Curry Rice Pudding, which combines coconut ginger pineapple chutney and chilli oil.
For those wishing to enjoy cocktails in a bustling rooftop location, White Shades offers Caddie Cocktails, a novel and sharing way to sample the drinks on tap. Options include the light and sparkling Elderflower's Dew, prepared with St. Germain Elderflower Liqueur, and the earthy Vertiver High, filled with aromatic grassy flavours of whisky and vetiver.
Guests are encouraged to relax during Golden Hour while enjoying stunning views of the metropolitan skyline. With themed specials throughout the week, White Shades provides the ideal environment for any event, whether it's a casual meeting with friends or a memorable celebration.
