Singapore is a melting pot of cultures reflected in the local food scene. But if you're looking for a taste of Malaysia, you won't have to go any further than Peppermint at PARKROYAL COLLECTION Marina Bay. This month's feature buffet, Tastes of Malaysia, celebrates Malaysian cuisine's rich and diverse flavours.

The buffet is headed by Peppermint's Chef de Cuisine, Leon Yee, and his culinary team. Chef Yee is passionate about Malaysian food, and his expertise is evident in the wide variety of dishes. There's something to please everyone, from all-time favourites like Penang Assam Laksa and Penang Char Kway Teow to more adventurous dishes like Kambing Panggang (Roast Whole Baby Lamb).

This delicious dish features a whole lamb infused with a familiar blend of satay spices and slow-roasted for hours, resulting in a delectable and succulent flavour. Even the chewy parts, such as the lamb flaps, are delicious, sinewy and very Moorish. The buffet includes a wide variety of dishes from different regions of Malaysia.

Here are just a few of the highlights from my media tasting session:

Penang Rojak. You have to make this one yourself, but it's a fun and interactive dish that allows you to create your salad. Fresh ingredients, including cucumber, jicama (turnip), pineapple, green mango, and peanuts, are served alongside a piquant shrimp paste dressing. You have to toss the ingredients together to create your unique flavour combination.

Penang Assam Laksa (pictured below). If laksa is your thing, then the Penang Assam Laksa is a tempting alternative to what we usually get in Singapore hawker centres. This classic Penang dish is a must-try for any laksa lover. The rich and aromatic fish-based broth is infused with tamarind, galangal, and lemongrass and topped with flaked mackerel, fresh herbs, cucumber, pineapple, and torch ginger flower. The sweet, sour, and savoury flavours combine perfectly in this dish, just right for your new laksa adventure.

Penang Assam Laksa

Dry Baby Lamb Bak Kut Teh. This is a new experience for me. A dry Bak Kut Teh? Typically, bak kut teh is a peppery or herbal soup of pork ribs, but as Peppermint is a halal restaurant, we get lamb ribs. Tender ribs, fall-off-the-bone ribs, overflowing with flavour ribs. Must must have this one. This unique dish features tender baby lamb infused with dark soy sauce, dry chilli, onion, and lady's finger. With the first bite, you know you are returning for seconds.

Orang Asli Tribe Ayam Pansoh. This traditional dish involves cooking chicken in a bamboo tube, creating a unique and aromatic dish. The fat bamboo stalk is filled with water, chicken, seasonings, and tapioca leaf. As the chicken cooks, it absorbs the essence of the bamboo, infusing it with a delightful smokiness. Peppermint's Orang Asli Tribe Ayam Pansoh was another new one for me, and it was delicious indeed.

Penang Chendol. And for sweet endings, try Penang's famous Chendol, which is its own world of sweet indulgence. This dessert features finely shaved ice, topped with vibrant green pandan jelly, red beans, cream corn, and attap seeds, all liberally bathed in coconut milk and palm sugar (gula melaka) syrup. A refreshing and satisfying treat, the Penang Chendol is another must-try if you seek a blissful dessert.​​​​​​​​​​​​​​

Of course, no meal would be complete without a nod to the daily buffet offerings that have made Peppermint a beloved dining destination. The ice bar showcases fresh seafood, including Boston lobster, glistening oysters, plump prawns and a huge basket of crab legs. There is a Japanese station with Sashimi sliced fresh to order and a fine selection of Sushi. Indian flavours are found at the station, serving the famous dal and crispy roti, while the expansive Salad Bar features a wheel of Parmesan for all your cheesy desires.
