Easter Exuberance Afternoon Tea
The Easter Exuberance Afternoon Tea will be served at The Courtyard in The Fullerton Hotel Singapore and at The Landing Point in The Fullerton Bay Hotel Singapore.
Savouries include roasted prime beef brioche with cornichon and pickled mustard, chives egg truffle mayonnaise in charcoal choux puff, and Norwegian smoked salmon tomato tartlet. For dessert, Executive Pastry Chef Siddharth Prabhu has composed a visually delightful repertoire befitting the occasion, from a carrot-shaped ivory chocolate egg to a lemon curd tart that resembles a miniature sunny-side-up egg.
Staying true to the daily ritual, the three-tier Afternoon Tea set will be served with freshly baked classic scones and raisin scones, clotted cream and jam, and a selection of premium loose-leaf TWG teas and Bacha coffee. Executive Pastry Chef Siddharth Prabhu and his team have dreamed up a medley of whimsical handcrafted treats that evokes the joy of Easter. The ‘Cracking Carrot’ ($15 nett per slice) is a tropical spin on the classic Easter egg, comprising a carrot-shaped ivory chocolate egg filled with pineapple crémeux and coconut mousse.
Another treat to brighten up the occasion is the 'Sunny-side Up Tart' ($15 nett per slice), with a mango and passion fruit ‘yolk’ framed by light-as-air yoghurt meringue, resting atop silky lemon curd.
Other highlights include the ‘Raspberry Mushroom’ ($15 nett per slice), a fudgy macadamia and salted caramel brownie capped with a raspberry choux puff, and the ‘Berry Basket’ ($15 nett per slice), meticulously handcrafted to resemble a woven basket filled with velvety vanilla bean mousseline, Manjari chocolate mousse and briolette crème, and topped with fresh berries.
Rounding off the collection is the adorable ‘Happy Ducky’ ($15 nett per slice), shaped as a classic childhood icon — a yellow rubber duck.
