The term, which means "water and flour," perfectly captures the spirit of Italian cooking. The restaurant has expanded its culinary appeal to include Keong Saik Road in Singapore. Chefs Antonio Manetto and Roberto Galbiati have combined Northern and Southern Italian elements in their dishes.
With more than 55 years of combined experience, Antonio and Roberto mix the flavours of Northern and Southern Italy in a pleasing way. Roberto, from Milan, and Antonio, from a small village close to Naples, combine their local specialities to create a distinctive eating experience.
Every meal they create showcases their commitment to serving authentic Italian food, as they use only the best ingredients, frequently imported straight from Italy.
At Acqua e Farina, dishes that highlight Italy's varied culinary geography take guests on a gastronomic journey. The emphasis on fresh seafood and colourful spices in Southern Italian cuisine is in stark contrast to the creamy sauces and hearty cold cuts of Northern Italian cuisine.
Dishes like Tagliatelle al Cacao con Gamberetti e Nduja, a chocolate pasta dish with prawns and spicy nduja salami paste, and Risotto ai Ricci di Mare e Bottarga, which combines creamy risotto with the umami richness of sea urchin broth, are two examples of this fusion.
The restaurant's rigorous approach is evident in the quality of its pizzas, which are made with dough that is precisely rested for 36 hours to attain the ideal texture and flavour balance. Their commitment to quality and inventiveness is evident in dishes like the Montanara, a twice-cooked Neapolitan speciality, and the creative Pizza Pistacchio, which features creamy mozzarella and pistachio cream.
Acqua e Farina has equally delicious desserts, from traditional gelato to a unique Dessert Platter that includes bite-sized versions of Crème Brûlée, Lava Cake, Panna Cotta, and Tiramisù. The restaurant serves a variety of signature cocktails to go with your dinner, such as the cool Capri Summer and the Spumonsky, which is a special combination of Italian and Japanese liqueurs.
The new Keong Saik location captures the spirit of both Northern and Southern Italy, thanks to the design of Italian architect Samuele Martelli. Up to 46 people can enjoy a warm and pleasant ambiance in the cosy 800-square-foot interior and the little 200-square-foot al fresco space, which also has seating for six outside.
A cosy and inviting atmosphere is created by Martelli's design, which combines cheery green shutters, creamy plaster walls, and terracotta tiles with Italian and local wood furnishings. Personal touches like pictures honouring Antonio and Roberto's ancestry add even more flavour to the meal.
