Le Pristine Singapore, Grand Hyatt Singapore's famed modern European dining destination, has introduced Sunday Brunch and Sunday Supper experiences, further redefining the city's culinary scene. Conceptualised by celebrated chef Sergio Herman, formerly of the three Michelin-starred Oud Sluis in the Netherlands, the new offerings capture his distinctive balance between tradition and innovation.

These carefully designed experiences turn Sundays into a full-day gastronomic celebration, complementing the restaurant's new evening service schedule from Wednesday to Saturday.

The refreshed concept features a new weekend ritual based on community, connection, and creativity. Sundays at Le Pristine Singapore are meant to provide two unique yet complementary dining experiences. The Sunday Brunch, served from 12pm to 3pm, is a boisterous and plentiful affair with vivid European flavours, whilst the Sunday Supper, served from 6pm to 9pm, is inspired by quiet family gatherings and anchored in Chef Sergio's Zeeland heritage.

Sergio's Father's Fish Soup is the centrepiece of both menus, a cherished recipe from the chef's early days cooking with his father at Oud Sluis. This dish exemplifies Herman's culinary philosophy of respecting his roots while embracing current ingenuity. "At Le Pristine Singapore, we wanted to bring the European spirit of gathering into Sundays," explained Sergio, the chef. "Food is about care, connection, and detail, and our new menus are an invitation to savour the moment while celebrating Singapore's dynamic food culture."

The Sunday Brunch at Le Pristine Singapore costs S$135 per person and includes a magnificent array meant to satisfy every taste. Salad Le Pristine, vitello tonnato, and pumpkin burrata are among the refreshing cold options available to guests. The seafood bar serves hamachi, tuna, Irish Mor oysters and gambero rosso with finger lime, while live stations provide pizzette marinara, ravioli ricotta verbena and BBQ gambero. The sweet bar finishes the meal with soft-serve desserts such as tiramisu, panna cotta and chocolate tart.

For those looking for a more personal dining experience, the Sunday Supper, priced at S$125 per person, expands the brunch menu with warming mains including lamb with eggplant and tomato, seafood orecchiette, chicken vol-au-vent and the classic Father's Fish Soup. Each dish mixes European sophistication with the comfort of home-cooked simplicity, resulting in a memorable end to the week.

Guests can enhance their experience with a 2.5-hour free-flow beverage package starting at S$50 per person, which includes refreshing spritzes, Bloody Mary cocktails, and non-alcoholic options such as the Italian Sour. Wine connoisseurs can enjoy handpicked selections from France, Australia, and New Zealand, while those wanting indulgence can opt for premium champagne pours like Dom Pérignon Brut and Moët & Chandon Brut.

Sundays at Le Pristine Singapore feel like a quiet celebration — the kind that unfolds slowly, with intention. There’s no chaos here, no jostling for attention. Just an artfully composed experience — elegant and refined, curated for those who appreciate the poetry of food done right.

Helmed by Chef Sergio Herman, whose Michelin-starred pedigree shows in every detail, Le Pristine’s new Sunday Brunch is not your typical buffet spread. It’s a curated journey of small plates — delicate compositions that balance restraint with creativity. The philosophy is clear: quality over excess, refinement over spectacle.

As we walk up the grand curved staircase into the cavernous bar leading further into the restaurant, the energy shifts from the bustle of the lobby to subtle elegance. The dramatically lit seafood bar at the entrance makes for a pretty picture, before we are led to our table with an envious view of the chef at work.

Here, each dish feels like a conversation between European sensibilities and Asian freshness. The Vitello Tonnato reimagines a classic with clean, silken flavours, while the Pumpkin Burrata offers comforting creaminess offset by gentle sweetness. The seafood bar gleams with hamachi, tuna, Irish Mor oysters, and a beautifully plated gambero rosso is lifted by the sparkle of finger lime.

My favourite, the Tuna Hamachi with radish petals, is delightfully citrusy and easily one of the best dishes at the seafood bar. The artisanal cheese selection is a thing of beauty. Instead of default options like Edam, Camembert or Roquerfort, the cheese picked for the brunch is unique and varied. Whether you prefer your cheese to be mild or strong, young or aged, pungent or floral, you are sure to discover a cheese you like.

Then come the warm plates, served on the table. Pizzette Marinara, Ravioli Ricotta Verbena, and a hearty fish soup — each one arriving with the kind of attention that makes you pause between bites. There’s a playfulness in the presentation, but the flavours remain confidently minimal — never overworked, always balanced.

Keep some space for dessert, as this is where Le Pristine Singapore truly shines. I, for one, could easily have eaten dessert for the entire meal, such is the brilliance of the pastry chef here. The Tiramisu is an obvious charmer, but it is the unassuming Madelines and Cannells that make me pause. With nothing to hide behind, these simple, bite-sized treats are baked perfectly, with slightly crispy edges and a moist crumb within.

Not to be overshadowed, the Dark Chocolate Tart holds its own and each decadent bite transports you a little closer to heaven. Children may not find comfort brunch favourites here, but they will be more than happy with the DIY Soft-serve Sundae Bar that reminds you not to take luxury too seriously.

Even the soundscape feels intentional. A curated DJ lineup by Eden YC provides a soundtrack that moves from soulful to hopeful — setting a rhythm that complements, never competes.

This isn’t your usual brunch. It’s for those who appreciate finesse, curation, and calm indulgence — for diners who understand that the art of eating lies as much in pacing as in flavour.

Le Pristine’s Sunday Brunch ties beautifully into Hyatt’s ongoing campaign, “Be More Foodie. Be More Fulfilled.” From 15 September to 9 November 2025, World of Hyatt members can earn double points on dining spend (excluding alcoholic beverages) across participating Hyatt restaurants and bars — a thoughtful nudge to savour more and be rewarded for it.
