The brunch begins with three delicate courses highlighting CÉ LA VI's Modern Asian signature. Starters include Pan Seared Hokkaido Scallops with nduja beurre blanc, citrussy yuzu and shrimp oil, as well as an artfully curated selection of Assorted Nigiri with Otoro, Hamachi, Akami, Salmon and Avocado.
Six main courses are served, ranging from everyday comfort to lavish pleasure. The Roast Chicken Breast reinvents a hawker staple, combining aromatic coconut rice with a subtle satay peanut sauce. For those seeking luxury, an upgrade to the restaurant's renowned A4 Miyazaki Striploin ($60 extra) features grilled perfection with konbu demi-glace, truffle gratin, and eryngii mushrooms. Each main course is accompanied by shared sides, followed by desserts — choose from the breezy Tropical Mango with coconut sorbet, inspired by mango sticky rice, or the rich Dulce Miso Toffee with gula melaka caramel.
Surprises continue as the Chef's Whisper black box returns to tableside, revealing canapés that enrich the dining experience. Guests can also enjoy free-flowing beverages for three hours, including Veuve Clicquot Yellow Label Brut Champagne, as well as creative cocktails like the Pearly Aperol Spritz with lychee and prosecco and the saké-forward Geisha with gin, yuzu, pear, and rosemary.
