I’m a huge fan of burgers and the recent spate of openings globally and in Singapore has been a welcome culinary trend. I hadn’t heard of Burger Labo prior to last week but am really happy that Singapore influencer Jonny Belfast firmly placed it on the radar and organised our monthly dinner there.
The location in Gilman Barracks is pleasant with lots of greenery and art galleries as you walk past the units. The music policy is rock and band led with 90s, 2000 & a few 80s hits through a cutting edge sound system. The service is World Class, lovely Singaporean team members who have incredible product knowledge, attention to detail and pride in the place.
I sampled a vanilla and strawberry milkshake both were excellent, the lads had sake, Little Creatures IPA and a coconut cocktail - all of which they enjoyed and drank down with rapid pace.
Onto the burger - I deliberately went with one rather than a sample of the 3 of the beef variety - I had the Wagyu which was full of flavour and so tender it took little chewing at all.

The patty’s were also packed full of flavour and coated with delicious sauces and marrow. The Angus and other Japanese (secret menu) will be tried on a later visit. There is also a chicken burger created by 3* Michelin chef Julien Royer of Odette - this was not tried and also left as a huge reason for a return visit.
Another highlight was the chance to meet Chef Ken Loon. We had a lovely 10min chat as a group and heard first hand his passion, vision and we also learned enough about beef (Argentine, Japanese, American) to go on Mastermind with it as our specialist subject. So in short - Singapore has a new burger champion - just don’t go on evenings I want to.
