Each order from HCS comes with live crabs tightly bound with straws. All you need to do is pop them into the steamer with the dried perilla leaves which impart the fragrance, get your ginger tea brewing and go through the instructions in the deshelling kit. Food at Yi by Jereme Leung is an absolute crab show. Crabbers can expect a full-blown feast what with innovative dishes like the Huizhou Hakka Style Salt baked Hairy Crab and the freshly wrapped Marinated Hairy Crab Hand Roll with Kristal Caviar, Pickled Ginger and Radish, or the evergreen way of steaming them with some Yunnan Brown Sugar Ginger Tea. Go through the a la carte menu to find a wide variety of crabs like the chilled Sri Lankan yellow crab marinated in vodka and Chinese wine, or the Japanese King Crab, which comes with noodles, homemade “dou hua” custard, peanuts, Sichuan mustard and chilli oil. If you can’t decide or don’t want too many options, you can just as easily call for a set which will sort your hunger pangs. Yan Ting is innovation at its finest with dishes centred around the hairy crab but also paired up with delectable meats like duck in a neat hand roll, or even a pork dumpling done Shanghai style.
