While there is no shortage of Italian restaurants in Singapore, there are only a handful that stand out for offering consistent and exceptional fine Italian cuisine.
One such favourite is Solo Ristorante in the popular Amoy street enclave. Chef Simone is passionate about using only the best ingredients and letting the flavours and freshness speak for themselves. So it is with quite some excitement we are indulging in their limited time (available until 30th June) seasonable white asparagus menu.

The specially curated degustation menu ($158++) is available for both lunch and dinner and is sure to impress lovers of Italy’s finest flavours. The journey commences with a Aspargi - a large simmered white asparagus served with umi (sea urchin) and a tangy orange and tarragon sauce. Next is Uovo – a bowl comprising a soft egg with creamy white asparagus fricassee, soft potatoes and crispy prosciutto

The third course is my personal favourite Tortelli - homemade tortellini stuffed with spiced butternut served with white asparagus, generous portions of foie gras and 25 year old Balsamic vinegar. For the mains there is a choice between Spigola - a lovely light Mediterranean seabass simmering in a green pea broth and served with white asparagus and clams or the Vitello – veal tenderloin with silky white asparagus, baby carrots, capers and wholegrain mustard.
To finish is Te’verde – a remarkable white asparagus gelato served with matcha and vanilla cremoso and candied lemon. The menu leaves us very satisfied and delighted by the many creative ways one can enjoy the delicacy of white asparagus.
The curated dishes truly do bring out the best of this sought after seasonal vegetable and it is well worth indulging in this special limited time menu. Solo continues to live up to its reputation as an ever popular Italian dining destination offering imaginative menus, fresh Italian produce and fine Italian hospitality.
To accompany the meal, a good selection of Italian wines from $15 a glass, beers, liquors and spirits is available. Recommended tipples to go with the white asparagus dishes include are the 2018 Paolo e Noemia d’Amico Falesia Chardonnay (Italy, Umbia, $115) and the 2016 Michele Chiarlo Barbaresco, Nebbiolo (Piedmont, $138).
