Unfortunately this year Australia had a water break give way that wiped out all the Sydney rock oysters from BURN's supplier! Don't fret though, BURN is making some changes and they will be bringing you 3 types of Oysters with a similar profile to the lovely Sydney rock oysters.
If you haven't heard of Rock oysters, here's a little blurb from Australia's Oyster Coast CEO Mark Allsop grading oysters. "Put simply, Rock oysters trump Pacific oysters in the flavour stakes because of their diet.
The Rock oyster is quite particular about what it eats and filters much smaller particles than Pacific Oysters, resulting in slower growth but flavours that are more directly related to the food in the water, so the oyster really reflects its merroir [the marine equivalent of terroir]," Susman says. "They're just a really unique animal."
